How to Make Healthy Paleo Pinwheels

healthy paleo pinwheels

When I switched to being gluten-free it was before gluten-free bread was good. If you have been GF for awhile, you know the card board type breads I’m referring to! Around that time, I found Collard Greens. I didn’t use them for flavor, because they have none, but rather because they hold a sandwich together really well. These healthy Paleo Pinwheels use Collard Greens in place of the traditional flour tortilla. This means that they are gluten-free, dairy-free, and are a good source of protein.

How to prep the Collard Green Leaf:

  1. Lay your chosen leaf stem side facing up on a large cutting board.
  2. Using a large knife, slide it carefully into the raised part of the stem, keeping the knife parallel with your cutting board and the leaf. Slide the knife down the length of the stem so’s to “thin” the stem. Without cutting a hole in the leaf, we’re aiming to keep the stem as thin as the leaf itself.

Equipment

  • Food Processor if making Paleo Cream Cheese Spread

Ingredients

For the Paleo Dill Cream Cheese Spread:

  • 1 cup Raw Cashews soaked in 1.5 cups of cool water for at least 4 hours, drained
  • 3 tbsp Fresh Lemon Juice about 1.5 lemons
  • 1 tbsp Dried Dill Weed fresh works too!
  • 1/2 tsp Fine Sea Salt

For the Wraps:

  • 4 large Collard Green leaves stems shaved
  • 6-8 oz Shaved Turkey your favorite homemade or deli variety
  • 6-8 oz Shaved Beef your favorite homemade or deli variety

Add On's:

  • Dill Pickles
  • Bell Peppers
  • Red Onions

Instructions

  • For the Paleo Dill Cream Cheese Spread, add all of the ingredients to a food processor. Blend on high for 1 minute, stop to scrape down the sides, and blend for an additional 2 minutes, or until creamy. Note: if your spread is too thick, add 1/2 teaspoon of water at a time until you get the desired consistency.
  • For the wraps, spoon 1/4th of the sauce onto the backside (stem side) of a collard leaf. Top with 1/4th of the meat plus any bonus add-on's. Roll the wrap so that the stem spans the length of the whole roll.
  • Using a sharp knife, cut the wrap into 1-inch thick pieces.
  • Chill until serving and then enjoy!

Notes

Using cream cheese in place of the cashew cheese is a good substitution if you are not Paleo.

I have been using the Hyperbaric Oxygen Therapy for the last few weeks and It has helped me so much. I struggle quite a bit with work related stress. When I'm in the chamber I feel completely relaxed, so much so that I can bring my laptop inside and work without stressing. The calmness I feel in the chamber lasts for the remainder of the day as well. I have found too, the more consistent I am with sessions throughout the week the better I feel. The office staff seems well trained in running the tanks too, so I feel safe. I see Dr. Kilcup as well for my brain and gut health. Until now, I don't think I've ever known what "normal" or "healthy" feels like. Thank you all, sincerely!

Darrell is highly knowledgeable and really gets to the root of the problem. Unlike a lot of doctors, Darrell doesn't just throw prescriptions at issues. He will test and test - digging for the cause and then working on fixing the issue. He and his staff are professional, courteous, and a joy to be around.

I am very grateful to have found Dr. Kilcup and be his patient for the last couple of years. He has helped me restore my health back after being exposed to toxic mold for years. He helped identify and treat all of my symptoms I was experiencing and address the root problem. I was looking for the right person who could help me heal with natural therapies and supplements and Dr. Kilcup was the perfect fit. Every appointment and session was necessary and one step towards all the progress I made. Dr. Kilcup is a great functional medicine doctor who was also an advocate for my own health and well-being. I never received any care or attention to detail from other Doctors in past experiences except with Dr. Kilcup. Anyone who is seeking a holistic path towards healing or improving their own health should see him.
