Chicken, Zucchini & Tomato Skewers
Ingredients
- 1/2 Lemon (juiced)
- 1 tbsp Extra Virgin Olive Oil
- 2 tsp Raw Honey
- 1 tsp Cumin
- Sea Salt & Black Pepper
- 12 oz Chicken Thighs (boneless, skinless, chopped)
- 1 Zucchini (medium, chopped)
- 1 cup Cherry Tomatoes
- 6 Barbecue Skewers
Instructions
- Preheat the grill to medium-high heat.
- Mix the lemon juice, oil, honey, cumin, salt, and pepper together.
- Thread the chicken, zucchini, and tomatoes onto the skewers. Brush the marinade onto the skewers and grill for three to five minutes on each side or until charred and the chicken is cooked through. Enjoy!
