This amazing recipe is from ‘The Big Man’s World’ – my favorite healthy recipe blog! These air fryer scallops are delicious, tender, and juicy. Plus they only require 6 ingredients: scallops, butter, parsley, lemon, salt and pepper. You’ll be done with this dish in less than 8 minutes – it doesn’t get better than that!

Why Are Scallops Important?

Like other seafood options, scallops have an amazing nutritional content.

Scallops are an excellent source of several trace minerals, including selenium, zinc, and copper. These minerals are important to your health, yet some people don’t get enough of them. If they did, there would be less health issues!

An adequate selenium intake promotes a healthy immune system and proper thyroid function. Zinc is necessary for brain function and healthy growth, and copper may protect against heart disease (1, 2345).

In addition to these important trace minerals, scallops provide high quality protein and anti-inflammatory omega-3 fatty acids. More than that, scallops are a great source of protein and a way you can diversify your diet.

Why Use an Air Fryer?

Do air fryers destroy nutrients? Yes, but at a much lower rate than many other methods of cooking, making it a healthier alternative. No matter how you decide to cook your food, you will see a loss of nutrition. The rate of nutrient depletion is increased in moist environments, which speaks in favor of the air fryer as it circulates dry heat, not moist.

Equipment

  • 1 Air Fryer

Ingredients

  • 1/2 lb Scallops
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 2 tbsp Grass-fed Butter divided
  • 1/4 cup Parsley finely chopped
  • 1/2 small Lemon sliced

Instructions

  • Pat dry the scallops and then sprinkle with salt and pepper. Brush one tablespoon of butter over the scallops.
  • Generously grease an air fryer basket with cooking spray and add a single layer of scallops.
  • Air fry at 200C/400 for 5-7 minutes, flipping halfway through. 
  • Remove them from the air fryer basket, and brush more butter on them. Sprinkle with finely chopped parsley and serve with sliced lemon.

Notes

TO STORE: Place leftover scallops in a shallow container and store them in the refrigerator for up to two days.
TO FREEZE: Once the scallops have cooled to room temperature, place them in a shallow container and store them in the freezer for up to two months.
TO REHEAT: Reheat in the air fryer or microwave until warm.

I have been using the Hyperbaric Oxygen Therapy for the last few weeks and It has helped me so much. I struggle quite a bit with work related stress.
