Lunch has always been one of my least favorite meals to make. It’s an interruption to the day, and it takes way too much time trying to think of what to make, then making it, then eating it…Perhaps that’s just because feeding a family of 11 lunch takes forever regardless, but perhaps not. Does anyone else feel that way? If you have a solution, I’m all ears!
Anyway, there are some days where I luck out and come up with a healthy, tasty meal that is simple and easy to make. I had one of those moments a few weeks ago when I created this chicken salad lettuce wrap.
We’ve eaten chicken salad in sandwiches or on crackers for as long as I can remember. (We made the switch from tuna to shredded chicken awhile ago when we learned about the mercury in tuna.) It’s ridiculous that I hadn’t thought of this combination sooner. Nevertheless, I have now and I am so happy I did! They are delicious, light, and can be whipped up for the whole family in less than 15 minutes. Beautiful, right?
Chicken Salad Lettuce Wraps
Serves: 4 Time: 15 minutes
Ingredients:
- 2 Cups of Cooked, Shredded Chicken
- ½ C Avocado Mayonnaise (or Mayo of your preference)
- Dash of Salt
- Romaine Lettuce
- Optional:
- Tomatoes
- Black Olives
- Avocado
- Walnuts
Directions:
In a medium size bowl, mix together the chicken and mayo until thoroughly combined. If it isn’t creamy enough, feel free to add in a spoonful more of mayo. Add salt to taste.
Pull off some medium to large lettuce leaves, and fill with the chicken salad (like a taco). Chop up some tomatoes, black olives and whatever else you can think of and sprinkle on top.
