These Loaded Sweet Potato Skins are easy to make and a great alternative to regular loaded potato skins. They are gluten-free and dairy-free – making them paleo diet friendly! Feel free to play around with the toppings if you have picky eaters at home or are just wanting to experiment.
Why not Regular Potatoes?
Sweet potato skin is very good for you! It is rich in potassium, fiber, manganese, vitamin A, vitamin C, vitamin E, and more. As well, an important area where potatoes and sweet potatoes differ is in their glycemic index (GI), a scale that rates how quickly a food will cause your blood sugar to rise. This is going to help keep your blood sugar from spiking as hard after a meal. Mostly, however, the change is best to help mix up your regular diet. After all, change is good!
Now you can make your own ‘Pub Food’ at home in a healthier and more cost-effective way! I hope you enjoy this recipe!
Baked Loaded Sweet Potato Skins
Ingredients
- 4 Medium Sweet Potatoes
- 1 tbsp Avocado Oil or any fat of choice
- 4 slices Bacon
- 4 oz Boneless Skinless Chicken Breast
- 1/2 Small Red onion
- 4 oz Mushrooms
- 1 Medium Avocado
- 1/4 cup Green Onion chopped
- Paleo Ranch Dressing for serving
Instructions
- Preheat oven to 400°F and pierce the potatoes with a fork a few times. Bake for 45 minutes – 1 hour until easily pierced with a knife.
- Preheat your broiler to high. Cut the potatoes in half lengthwise and scoop out the very center, save for another use.
- In a large skillet cook the bacon over medium heat until crispy. Remove and set aside. In the bacon fat add your diced chicken breast and cook until golden on each side and cooked through, about 6-8 minutes. Set aside with the bacon.
- Add the onions and mushrooms to the same skillet. If there's not enough fat, add in a little of your choice. Cook, stirring occasionally, for about 5-10 minutes, until the onions and mushrooms are soft. Season with salt and pepper, to taste.
- Place the skins, skin side up, on a baking sheet and drizzle with your fat of choice. Broil for 3 minutes or until the skin is crisp. Flip and continue to broil another 2-3 minutes, until the skin starts to char just a bit.
- Fill the skins with the onion mushroom mixture, the chicken, and crumbled bacon. Top with diced avocado and sliced green onions. Serve with ranch.
Notes
Here are a few substitutions you can try:
- Pork Carnitas – Instead of chicken, use some pulled pork instead. The pork has a fantastic flavor with these sweet potato skins.
- Regular Potatoes – If you don’t have any sweet potatoes on hand, you can switch them out with any potato.
- Barbecue Sauce – Switch out the ranch dressing for some sugar-free barbecue sauce. It adds a fun flavor to these healthy potato skins.
- Vegetables – You can add roasted broccoli, cauliflower, or any other veggies you enjoy.
- Guacamole – Add a spoonful of guacamole on top of each of the homemade sweet potato skins.
