Baked Loaded Sweet Potato Skins

Ingredients

  • 4 Medium Sweet Potatoes
  • 1 tbsp Avocado Oil or any fat of choice
  • 4 slices Bacon
  • 4 oz Boneless Skinless Chicken Breast
  • 1/2 Small Red onion
  • 4 oz Mushrooms
  • 1 Medium Avocado
  • 1/4 cup Green Onion chopped
  • Paleo Ranch Dressing for serving

Instructions

  • Preheat oven to 400°F and pierce the potatoes with a fork a few times. Bake for 45 minutes - 1 hour until easily pierced with a knife.
  • Preheat your broiler to high. Cut the potatoes in half lengthwise and scoop out the very center, save for another use.
  • In a large skillet cook the bacon over medium heat until crispy. Remove and set aside. In the bacon fat add your diced chicken breast and cook until golden on each side and cooked through, about 6-8 minutes. Set aside with the bacon.
  • Add the onions and mushrooms to the same skillet. If there's not enough fat, add in a little of your choice. Cook, stirring occasionally, for about 5-10 minutes, until the onions and mushrooms are soft. Season with salt and pepper, to taste.
  • Place the skins, skin side up, on a baking sheet and drizzle with your fat of choice. Broil for 3 minutes or until the skin is crisp. Flip and continue to broil another 2-3 minutes, until the skin starts to char just a bit.
  • Fill the skins with the onion mushroom mixture, the chicken, and crumbled bacon. Top with diced avocado and sliced green onions. Serve with ranch.
