Double Chocolate Breakfast Muffins

Simple, delicious, and a healthier alternative for breakfast and dessert!

Ingredients

  • 1 1/2 cup Oat flour (regular oats blended in a blender, or you can buy at a store)
  • 1 cup Old Fashioned Oats
  • 1/2 cup Quick Oats (or 1/4 cup more old fashioned oats)
  • 1 1/2 tsp Baking Soda
  • 1/4 cup Cocoa Powder
  • 1 pinch Salt
  • 3 tsp Vanilla Extract
  • 2 large Eggs
  • 1/2 cup Honey (add extra to preference)
  • 1 cup Avocado Oil
  • 1 cup Dark Chocolate Chips

Instructions

  • Preheat oven to 375* F and line regular sized muffin tins with paper cups.
  • Mix together all dry ingredients in a medium size bowl.
  • Then add vanilla extract, eggs, honey, and veggie oil and mix until combined.
  • Stir in chocolate chips.
  • Fill muffin cups 3/4 way full.
  • Bake for 15-20 minutes, or until toothpick comes out clean.
